This was a sample or “dummy” cake that I made to replace a shop favorite. I made the styrofoam base, then covered it in sugar paste. All flowers, decoration, etc are also sugar. Yes, we do this sort of thing in actual cake. All. The. Time.

It is monday morning and I have just finished setting up the bakery case at www.designcakes.com. Now it is time for a hot cocoa and some sugar sculpture. It’s all about making display cakes this morning! Speaking of displays, the egg cake on top of the case in this picture was done on my first week working here.
Sugar pony-unicorn for thirtieth birthday cake. This is one of the few ideas that, if someone did ever dare get me a cake (never happen — being an industry veteran) that I would be totally enchanted with. Anyway, the horse was pretty damn fun to make. Takes me back to when I was (really trying hard to) getting into toy design.
